Production
Campo de Borja, a DOP in Aragon in northern Spain, got its name from the Borja family, known in Italy as Borgia as a powerful and wealthy noble family. The climate here is rather severe and arid, with hot, dry days and cool nights. In this region, the Viura grapes thrive to produce a crisp, refreshing white. The Macabeo grapes are sourced from vines planted in alluvial soils in the foothills of the Moncayo mountain. The must is firstly chilled, then there is a short period of skin contact. This is followed by a long slow fermentation at controlled temperature (22ºC - 26ºC) in stainless steel tanks.
