Production
Sourced from vineyards in Worcestershire and Essex, this 100 % Pinot Noir was made using clones selected for their small berries to ensure maximum flavour concentration. The grapes underwent a 5 -day cold soak, followed by fermentation on skins for 10 days before being pressed and transferred to tank and barrel for ageing. 75 % was aged in stainless steel to retain freshness and li ft, while 25 % matured in French oak barrels to bring delicate structure and subtle spice.
Tasting notes
Bright and li fted on the palate, with layers of red fruit and a gentle thread of spice. Light-bodied with soft tannins and a smooth, flowing finish. Refreshing and well-balanced, offering purity of fruit and a touch of savoury complexity.
