Production
The Haute Vallée de L’Aude benefits from a warm climate combined with high altitude, which results in wines with both concentrated fruit and refreshing acidity. These vineyards are located on the cooler slopes of the Pyrenees foothills on beds of limestone and clay. The Chenin Blanc is one of the last varieties to be picked, giving plenty of time for full, elegant ripeness to be achieved, while maintaining a refreshing crispness and crunch. After being hand-picked, the grapes are fermented in stainless steel with a substantial French oak touch at the end, to add a toasty, suave finish to complement the vigorous fruit.
